Carrot and Coconut Cake

If you’re looking for a treat at your Sweet Enough Coffee Morning, try this crunchy-topped traybake, which we found on the BBC Good Food Website here and have adapted the sugar intake.


  • 250g Butter
  • 150g Agave Syrup
  • 1 tsp Vanilla Extract
  • 3 Large Eggs
  • 200g Self-Raising Flour
  • 50g desiccated coconut
  • 200g grated carrot
  • 2 tsp mixed spice


  1. Melt butter, cool slightly and add syrup, vanilla and eggs
  2. Once combined add dry ingredients
  3. Pour into a lined tin (20x20cm)
  4. Bake at 180C for 30minutes
  5. Combine 75g coconut and 30g agave syrup and spread on top of cake
  6. Bake for a further 5-10minutes
